I made a version of this with one of my early unnamed roast curry batches.  The salting of the eggplant is key (Still I'm not sure why Ramona adds turmeric at this stage).  Just make sure you dry off the water that the salt pulls from the eggplant.  This will facilitate the crispiness and keep your face free of spattering grease.

What happens when a spice deprived boy from Indiana, transplant to Oregon, starts getting crazy ideas of mixing Jamaican and Quaker roots with cravings for sustainable rich culture and design?  One day he shares his ketchup recipe with a summer food crew inspiring someone to say, "Ketchup America!"....while some are occupying Wall Street, I'm occupying my kitchen...ready to collaborate and feed the minds and bodies of this nation...somehow...some way...you can say its a leading...slightly foggy...but I can smell the pot of golden curry at the end of the tunnel...hoping it is the beginning of a beautiful rainbow of culture and collaboration.
